  • 3 cups Ore-Ida® Diced Hash Brown Potatoes
  • 2 cups Ore-Ida® Chopped Onions
  • 12 ounces Heinz® HomeStyle Rich Mushroom Gravy
  • 8 Eggs
  • 1/4 teaspoon Hot Pepper Sauce
  • 2 tablespoons Vegetable Oil
  • 1 Red Pepper or Green Pepper, chopped


  1. Preheat broiler to high and place rack about 6 inches from heat source. In a medium bowl, whisk together Gravy, eggs and hot pepper sauce. Season with salt and pepper if desired.
  2. Heat oil in a 12-in. ovenproof, nonstick skillet over medium high heat. Cook Potatoes, Onions and bell pepper for 3 to 4 minutes, stirring occasionally. Pour egg mixture evenly over potato mixture. Reduce heat to medium and cook for 5 to 8 minutes, or until bottom is set. 
  3. Place skillet in broiler for 5 to 7 minutes, or until top is set and lightly browned. Slice into 8 wedges. Garnish with shredded cheddar cheese and chopped green onion if desired.


  • If desired, substitute fresh eggs with egg substitute with no cholesterol. One 8 oz. carton is equal to 4 large eggs.

    If desired, substitute 2 cups of frozen Ore-Ida Chopped Onions with 2 cups of fresh chopped onions. Cook as directed above.
