4 Cups Ore-Ida® Southern Style Hash Browns
1 Cup Heavy Cream
1/2 Cup Sour Cream
3 Tablespoons Fresh Basil Divided, chopped
1 1/2 Teaspoons Salt
1/2 Teaspoon Pepper
1 Cup Mozzarella Cheese Shredded
1/4 Cup Parmesan Cheese Shredded
3 Plum Tomatoes Medium, sliced
Preheat oven to 350°F. Coat 9-in. deep dish glass pie plate with nonstick cooking spray. In a medium bowl, whisk together eggs, heavy cream, sour cream, 2 Tbsp. of basil, salt and pepper until smooth, and set aside.
Spread Hash Browns evenly into bottom of pie plate. Bake uncovered for 20 minutes. Remove from oven and sprinkle with mozzarella cheese. Arrange tomato slices on top and sprinkle with Parmesan cheese. Pour egg mixture over top.
Bake for 40 to 45 minutes, or until eggs are set and lightly golden brown. Garnish with remaining 1 Tbsp. of basil and additional Parmesan cheese if desired.
If desired, substitute 3 Tbsp. of chopped fresh basil with 1 Tbsp. of dried basil.
