Ingredients
- 3 Cup(s) Ore Ida Potatoes O'Brien
- 1/2 Cup(s) Ore Ida Chopped Onions
- 8 Ounce(s) PORK SAUSAGE, FRESH
- VEGETABLE OIL
- 6 EGGS beaten, or 1 3/4 cups egg substitute
- 1/4 Teaspoon(s) SALT
- 1 TOMATO chopped
- 1/4 Cup(s) PARMESAN CHEESE grated
Instructions
Cook sausage in a large nonstick skillet coated with vegetable spray until browned, breaking into crumbles with a wooden spoon. Pour off all but 1 tablespoon drippings. Add potatoes and onions to skillet; continue to cook 8 minutes or until potatoes are tender and golden brown, stirring frequently. Beat together eggs and salt; add to skillet. Cook about 3 minutes or until eggs are set, stirring frequently. Stir in tomato; heat through. Sprinkle with cheese.
