No need to cut and peel potatoes to make this easy, flavorful Potato-Leek Soup. We used packaged potatoes and the results were delicious.
1 pkg. (24 oz.) ORE-IDA STEAM N' MASH Cut Russet Potatoes
1 Tbsp. butter
2 leeks, white and light green parts chopped
1 clove garlic, minced
1 qt. (4 cups) water
2 tsp. WYLER’S Instant Bouillon Chicken Flavored Granules
1/2 cup milk
2 Tbsp. chopped fresh chives
Microwave potatoes as directed on package. (Do not mash.)
Melt butter in large saucepan on medium heat. Add leeks and garlic; cook and stir 5 to 6 min. or until leeks are tender. Add water, bouillon and potatoes; stir. Simmer on medium-low heat 10 min. Remove from heat.
Use immersion blender to blend potato mixture until smooth. Add milk; cook on medium-low heat 2 to 3 min. or until heated through, stirring frequently. Sprinkle with chives.
